salmon ceviche

This ones for all the fish fans out there. It’s super easy to make your own ceviche, theres no real cooking involved, it’s more like making a salad. If you’re hosting a dinner party, i recommend dishing this out as your starter.

Ingredients (Serves 2):

1 salmon fillet
Coriander, fresh bunch
1 Red chilli, mild
2 limes
Salt 1/2 tsp
Pepper 1/4 tsp
1 spring onion
Ginger 2 tsp

Method:

  1. Prepare the salmon my removing any skin from the fillet, then cut into slices. Each slice should be just over a centimeter thick. You could also dice the salmon if you prefer. Keep refrigerated until ready to use.
  2. Juice the limes, chop the spring onions, chilli, ginger and coriander. Mix the ingredients together with the salt and pepper.
  3. Just before you intend to serve, mix the salmon into the lime juice dressing and mix well, The colour of the salmon will turn light pink, this is the acid from the lime cooking the fish.
  4. After 10 minutes of regular stirring, the salmon should be ready to serve. Plate the slices of salmon, add some of the chopped ingredients and a drizzle of the lime for colour. Top with some fresh lime and ground pepper to finish.
